Gluten Free One-pan Breakfast: Shakshuka with Fried Perogies

Shakshuka 1 1024x804 Ingredients:
  • 1 cup frozen Gluten Free Potato and Cheddar Perogies (or Chicken Perogies)
  • 1 cup diced tomatoes
  • 1 cup gluten free tomato sauce
  • ½ onion, peeled and diced
  • 1 clove garlic, diced
  • ½ medium zucchini( cleaned and cut for large pieces)
  • 2 small orange and yellow bell peppers (cut for large pieces)
  • 2 eggs
  • ½ tsp cumin
  • 1½ tbsp extra virgin olive oil
  • ½ tsp paprika
  • Salt and pepper
  • pinch of sugar
  • 1 tbsp fresh chopped parsley

Preparation:

  1. Boil water in the pot and cook Gluten Free Potato and Cheddar Perogies for 2-3 minutes and drain them.
  2. Heat ½ tbsp olive oil in small skillet on medium. Fry perogies for about 2-3 minutes on each side or until golden-brown.
  3. Heat a deep skillet on medium. Slowly warm olive oil in the pan. Add chopped onion, saute for a few minutes until the onion begins to soften. Add garlic and continue to saute till mixture is fragrant.
  4. Take off sauted onion and save in a separate bowl.
  5. To the same skillet add the bell peppers and zucchini, salt and pepper to taste, saute for 5-7 minutes over medium until softened. Take off cooked vegetables and put on side in separate bowl.
  6. Add a bit of olive oil and return sauted onion to the skillet. Add diced tomatoes and tomato sauce, stir till blended. Add spices and sugar, salt and pepper to taste, stir well, and allow mixture to simmer over medium heat for 5 minutes till it starts to reduce.
  7. Crack the eggs, one at a time, directly over the tomato mixture, cover with lid and cook “over easy” style on top of the tomato sauce. Allow mixture to simmer for 10-12 minutes, or until the eggs are cooked and the sauce has slightly reduced.
  8. Open lid, make space for fried perogies and sauted vegetables and place them in skillet. Garnish with the chopped parsley.
  9. Let cool a bit and serve directly in a skillet.
