Gluten Free Pan-Fried Ricotta and Spinach Ravioli with Tzatziki Sauce

  • 1 bag frozen Gluten Free Ricotta Cheese and Spinach Ravioli
  • 2 tablespoon grape seeds oil
  • Pinch of salt

 Sauce:

  • 1 cup plain yogurt
  • ½ cup sour cream
  • 1 cucumber – peeled,seeded and grated
  • 1-2 cloves garlic, peeled
  • 1 tablespoon chopped fresh dill
  • 1 teaspoon fresh lemon juice
  • 1 tablespoon olive oil
  • Salt and white paper to taste

Preparation:

1.  First boil large pot of water, then add salt and place frozen ravioli into.
2.  Gently stir with the spoon to keep ravioli from sticking to the bottom of the pot.
3.  Boil on high heat until all ravioli floats, then reduce heat to medium and continue cooking for another 4-6 minutes.
4.  Pour 2 tablespoon of grape seeds oil into a frying pan heated at medium heat.
5.  Place cooked and dried ravioli into a frying pan and fry for about 2 minutes on each side or until golden brown.
6.  Put ready ravioli on paper towel to remove excess oil.

Sauce:

NOTE:  The recipe very straight forward, but it’s important to note that it tastes better after at least two hours in the fridge. So just make it ahead of time.

1.  In a small bowl, combine the olive oil, lemon juice, salt, white pepper and grated garlic. Mix until well combined.
2.  In a different bowl, blend the yogurt and sour cream with a whisk. Add the olive oil mixture and mix well.
3.  For the last step, add the grated cucumber and chopped fresh dill.
